Close to a hundred ciders and perries from around twenty suppliers, Herefordshire led, alongside craft beers, lagers and a wide range of flavoured gins. The wine cellar sits over the road at number five.

ONE COUPLE · OVER TWENTY YEARS · ROSS-ON-WYE

Richard and Hayley opened it. They still run it.

Richard and Hayley Mayo opened Truffles on the High Street in 2003, newlyweds who shared a passion for good food. It started around local cheese and produce, then grew, year by year, into local wines, ciders and beers, a kitchen baking at the back, and a Continental larder. Over twenty years later they are still behind the counter, and at the end of 2024 took a second shop at number five so the deli, the wine cellar and the cafe could each have room to breathe.

The shelves grow into local wines, ciders and beers, and the kitchen at the back starts baking.

The cider list builds toward a hundred lines, the Continental larder fills out, the counter becomes the heart of the shop.

A second premises at number five High Street lets the deli, wine cellar and cafe spread across two shops.

It is why the cellar leans Herefordshire. Close to a hundred ciders and perries, from around twenty makers within reach of the river.

THE SPECIALITY · A LARDER WITH PROVENANCE

The ham comes from a mile up a Spanish mountain.

The fun of the larder is the story behind the jar. Take the Jamon de Trevelez, cured in the highest village in Spain, almost fifteen hundred metres up. The thin mountain air and the wind mean it needs less salt than a lowland ham, which leaves it noticeably sweeter. That is the kind of thing we like to be able to tell you about what you are buying.

Yes. The counter is cut to order on the wire from whole truckles, British and Continental. Tell us what you like and we will hand you a piece before you commit to a wedge.

Do you make the cakes and bread yourselves?

Yes, made to order from the deli counter, sandwiches and salad boxes both. There is seating inside and out in the courtyard at the back if you would rather sit.

46 High Street, in the heart of Ross, a few doors from the Market House. Monday to Friday 9 to 5, Saturday 8:30 to 5:30, closed Sundays.
